Grandmother's Buttermilk Cornbread

"This is my grandmother's cornbread recipe and it's the best - sweet and moist!" Ingredients 1/2 cup butter 2/3 cup white sugar 2 eggs 1 cup buttermilk 1/2 teaspoon baking soda 1 cup cornmeal 1 cup all-purpose flour 1/2 teaspoon salt Add all ingredients to list Directions Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Ingredients used in CHICKEN PICKLE • Boneless chicken pieces - 500 grams. • Oil - to fry. • Ginger garlic paste - 1 tablespoon. • Turmeric powder - 1/2 tea spoon. • Dry coconut powder - 1 cup. • Coriander powder - 1/2 tea spoon. • Garam masala powder - 1/2 tea spoon. • Red chili powder - 3 tablespoons. • Crystal salt - to taste. • Vinegar - 1 tablespoon. • Lime juice - 2 tablespoons. • Mustard powder - 1/2 tablespoon. • Salt - to taste. • Fenugreek powder - 1 pinch. LEMONY CHICKEN & RICE RECIPE

INGREDIENTS 2 cups water 1/2 cup reduced-sodium soy sauce 1/4 cup lemon juice 1/4 cup olive oil 2 garlic cloves, minced 2 teaspoons ground ginger 2 teaspoons pepper 16 bone-in chicken thighs, skin removed (about 6 pounds) 2 cups uncooked long grain rice 4 tablespoons grated lemon peel, divided 2 medium lemons, sliced DIRECTIONS In a large resealable plastic bag, combine the first seven ingredients. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight. Preheat oven to 325°. Spread 1 cup rice into each of two greased 13x9-in. baking dishes.  Top each with 1 tablespoon lemon peel, 8 chicken thighs and half of the marinade.  Top with sliced lemons. Bake, covered, 40 minutes. Bake, uncovered, 15-20 minutes longer or until a thermometer inserted in chicken reads 180°. Sprinkle with remaining lemon peel.  Yield: 2 casseroles (4 servings each).

Ingredients 1 pound skinless, boneless chicken breast halves - cubed 1 cup sliced carrots 1 cup frozen green peas 1/2 cup sliced celery 1/3 cup butter 1/3 cup chopped onion 1/3 cup all-purpose flour 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon celery seed1  3/4 cups chicken broth 2/3 cup milk 2 (9 inch) unbaked pie crusts Directions Preheat oven to 425 degrees F (220 degrees C.) Preparation Time : 10 mins Cooking Time : 30 to 35 mins Serves : 4 to 6 Ingredients: Fish – 300 grams Oil – 1/2 cup Mustard Seeds / Kaduku – 1 tsp Cumin Seeds / Jeerakam – 1 tsp Fenugreek Seeds / Vendayam / Methi – 1/4 tsp Asafoetida / Hing / Kaya Podi – 1/4 tsp Curry leaves a handful Tomatoes – 1 large chopped finely Coriander Powder / Malli Podi – 2 tblspn Kashmiri Chilli Powder – 3 tblspn Turmeric Powder / Manjal Podi – 1 tsp Tamarind – 1 small lemon size Water – 2 cups Salt to taste Method: Take tamarind in a bowl, add in 1 cup of water. Let it sit for 10 mins. Squeeze and strain it, add more water to extract more tamarind juice. Heat oil in a kadai. Add in mustard, cumin, fenugreek, asafoetida and curry leaves. Saute this for a min. Grandma's Salmon Patties

This recipe is old as the hills, but still very timely and well-loved by old and young alike. It's a great way to get finicky persons to eat fish and increase their intake of Omega 3's. Served up with a bowl of fluffy mashed potatoes and a bottle of catsup, salmon patties are a favorite Texas supper. Growing up, we called these salmon croquettes, but croquettes are round, almost like meatballs and, although "patty" doesn't sound quite as elegant, its flat shape cooks quicker and more evenly. Although this recipe originally called for crushed saltines, these days I use cracker meal (McCormick's is a good brand). It's convenient, and its fine crumbs cover and adhere to the patties better than cracker crumbs. Ingredients 450g/1lb self-raising flour 125g/4oz caster sugar 1 tsp baking powder 1 tsp mixed spice pinch salt 125g/4oz unsalted butter 450g/1lb mixed fruit and peel 1 tsp bicarbonate of soda 250ml/9fl oz milk Method Preheat the oven to gas 150C/300F/Gas 2. Grease and line a 1.4kg/3lb loaf tin. In a bowl sift together the flour, sugar, baking powder, mixed spice and salt. Rub in the butter and then fold in the mixed fruit. Stir the bicarbonate of soda into the milk then add to the mix and stir until well combined. Spoon the mixture into the loaf tin and place in the oven for 1hr 45 minutes. Keep an eye on the cake and cover it with a sheet of foil if it’s getting too dark. Allow to cool a little and then turn out. Serve in slices with plenty of butter.

POTATO PAN ROLLS RECIPE

INGREDIENTS 4-1/2 to 5 cups all-purpose flour 3 tablespoons sugar 2 packages (1/4 ounce each) quick-rise yeast 1-1/2 teaspoons salt 1-1/4 cups water 3 tablespoons butter 1/2 cup mashed potatoes (without added milk and butter) Additional all-purpose flour DIRECTIONS In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in mashed potatoes and enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. Divide into 16 pieces. Shape each into a ball. Place in two greased 8- or 9-in. round baking pans or ovenproof skillets. Cover and let rise in a warm place until doubled, about 30 minutes. Preheat oven to 400°. Sprinkle tops of rolls with additional flour. Bake 18-22 minutes or until golden brown. Remove from pans to wire racks. Yield: 16 rolls.
